I'd have to be a smith of some description, given I work on modern day metalworking tools as a trade and as a hobby partake in old timey blacksmithing with a hammer and anvil.

I suppose my actual job is roughly half hauler, half trader.

Philosopher sounds good though. I'm not even expecting a gold vein through my bedroom or anything.

I study computer science IRL so I would probably be a mechanic in DF. I'd create Dwarven logic in my shop.

Currently employed as a vineyard labourer, so I'd be a dabbling grower
but due to my idle time and constant partying, I've apparently become legendary in my social skills

Looks like we have a whole fortress here already, with lots of peasants, brokers, masons, smiths and disturbing lack of carpenters and craftsdwarves.
Sadly, I do not have a skill that translates easily into DF - my profession is scientist and I also work as a college teacher.

You could be the Dwartificial Intelligence - AKA the Dwarf that is isolated from all the other Dwarves but controls the entire fortress with a system of levers. Not sure how that is related to science, though. Maybe you could be a mad scientist and pull the lever that floods the entire fortress?

And then the heroes foil his plan and the fortress goes on red alert to save most of the fortress?

That last gobbo would stand there, missing an arm, punctured in a kidney, liver, and spleen, fading in and out of consciousness at the far end of where the drawbridge would go, and his last sight would be the drawbridge dropping down and smashing him like a bug.
