@x2yzh9, a quick guide to unbinding Symbiots:

There are usually three worlds next to Stigmata, which house the starting Symbiots. The planets' names might vary, but they're all connected only to each other and Stigmata, which in turn is connected to the rest of the galaxy(as mainiac said earlier).

You need either a galaxy in which there is an additional connection running from one of those three planets to some other in the galaxy proper(i.e. not Stigmata) - as in EuchreJack's example, where there exists an additional jump lane from Chernobog to Aragon - or have a connection running from the cluster completely ignoring Stigmata, as in the following picture:

(the colors are off, by the way. All dark green planets should be grey etc.)
Here the only connection from the symbiot cluster runs from Absolution to Rampart, completely bypassing Stigmata with it's garrison.

The above is actually a very interesting galaxy. On the second turn, 6 podships jumped to Rampart(which was uninhabitable). This would have turned out to be the REAL Escape from Earth.(or more of: "run for your lives! The bugs are fucking everywhere!" type of game)
