Just found a rather serious issue, and I'm honestly surprised it hasn't come up yet. Boats can't pass each other on the canals. If anyone leaves an empty boat in the canal, it will obstruct movement on all sides, even if it's up against the wall. A manned boat will push it along, and slow down considerably. We will need to incorporate some kind of dock at strategic intervals, or simply widen the canal. Testing in superflat reveals that a 4-wide canal has no such problems, unless the boat is parked in the middle of the canal.

We'll eventually widen the canal when we can move all the temporary stuff out of it.

I did suggest a 5 wide canal, two wide walking passage, for venice-like areas.  Once it goes underground, the canal can slowly widen to that, so the front gate doesn't have to be redone.

The system that carries stuff down from the farm to the hopper seems to be broken. When seeds and wheat flow down the two trenches and into the entrance to the hopper, they get stuck there.

Maybe the hopper is clogged? If the chest underneath has all it's slots filled perhaps with mostly empty wheat stacks, and with completely full seed stacks then the hopper will just fill with seeds and stop moving anything else.

They're nearly as bad as badgers. Build a couple of anti-buzzard SAM sites marksdwarf towers and your fortress will look like Baghdad in 2003 from all the aerial bolt spam. You waste a lot of ammo and everything is covered in unslightly exploded buzzard bits and broken bolts.

The hopper is easily clogged. It requires manual unpacking to make sure everything gets in the chest, though 18 empty stacks of seeds should be enough to catch the seeds produced. Problem is, Hopper only has 5 spaces and deposits pretty slowly. If we had more redstone and some capacitors, we could make it fully automated, via item sorter.

Which reminds me, now that we have an elevator to the farm, and the elevator is (roughly) horizontally aligned to the drop shaft, we can probably move the collection area further up.

I just checked. Someone decided to go digging in the collection channel, completely messing it up. They'd dug out a block beneath the central irrigation channel, causing it to flow into the collection one and stopping the flow.

I've gone ahead and put all boats in one of the chests next to the canal. I think we could add some kind of "courtesy rule" that states that you should put any parked boat you encounter into a nearby chest, but not needing to go on a routine to do that.

The best way to demonstrate it to him is take a save of 40 year old fortress with 150 dwarves in it on a good sized embark with a volcano that just breached the circus and install it on his gaming rig and watch it bring his rig to its knees.

Go ahead and take the iron, just don't smelt it, you get better yield in a factory, the coal should be grabbed with a silk touch pick. Gold also is fine to take, you still get the ore for that one too, everything else needs a silk touch.
I might have been the one who screwed up the farm, I recall falling into the channel, but I don't remember breaking any dirt in the channel, I did break a chunk above the channel in order to get out.
I'm going to be working on the rail station now, I'm putting the laketown station in the old farm, then again it would be sooo much more efficient if I put the station at level 11 where the lines are like everyone else does. If so the old farm is a great place to put the entrance. Required would be a drop shaft into water, a landing spot for a cart teleport, or alternatively a water elevator. The top level of the entrance is a good place for a small park/plaza. Then stairs going down to the rail level also, a spiral design is good to ensure the stairs stay in the general area of the elevator. Maybe an open shaft around the elevator, the stairs spiralling around the outside of the shaft, a glass ceiling over the shaft... And for good measure a drop shaft/cart porter hidden off to the side somewhere perhaps the drop shaft hidden under a fountain and the exit of the cart porter landing near landscaping centered around the fountain. For now I'll consider where to put it and dig the rails/drop shaft. The rest can wait until I get the time :p
