where can i find a list of what each improvement do?
Unfortunately there is no such list. But here we go:

Mine: +1 iron or gems or gold (requires existing resource)
Quarry: +1 stone
Farm: +1 food
Pasture: +1 Horse
Hunter Camp: +1 food
Woodcutters: +1 wood
Fishing : +1 food
Road: passing over tile costs only 1 move, allows trade of resources between connected cities.
For record: With Mines, Gems provide +4 Money income, and Gold provides +3 money income.

Kashyyk, I think that's a cool idea, but I think it might be more appropriate for towns. Though razing villages doesn't seem to happen much so maybe it would be balanced...

Is there any way to cut down Forests, please, NQT? And turn them into Plains and whatnot?

I really don't need this much fucking wood.

Nope. Not within the game at least (although NQT could add a house rule allowing you to do so).
Honestly, if they are really that unnecessary, it may actually be to your advantage to abandon them (thus cutting down on your pop growth cost).

No abandoning tiles. Your people live there, regardless of how useless they are. If you want more plains, conquer them. Remember you can get more food from woods by putting hunters in them.

Conquering turns a claimed tile into an unclaimed tile.
There's an important exception to this: Conquering a city gives you that city with its population reduced by 1 (to a minimum of 2).

You can starve them. Or tax them into oblivion. Or just refuse to grant them your protection anymore.

Also, the problem with just trying to get more plains through conquering is that it uses up population.

You're more than free to conquer your own forests to put down the outlaws that hide within.
There's a couple lines of code that specifically prohibit that, actually.
