I'm on a serious Roguelike-like binge right now, I'm pretty much not playing anything else.
Know of any good ones that aren't on my list?

Are there any rpg's which have detailed combat systems (like DF adventure mode) but are decently fleshed out sandboxes? (Unlike DF adventure mode)

Possibly Die By the Sword, but that's linear and not a sandbox, I believe.  It has fairly detailed swordfighting though.

Hmm...its an interesting game, thanks, but not quite what I'm looking for. When I said "detailed" I meant in the same way that DF simulates entire organ systems and weapon physics for combat.

For an unusual request: A game that needs only occasional input (even if extensive input when it does) and runs itself for most part. Or rather, a game that I can read a book while playing, as in, give the orders, designs or so forth and then just pay minimal attention while the orders are carried out. Ideally, I'd want something with some degree of depth and complexity without going all the way to DF itself.

Games I already know about that could fit this:
The Supreme Ruler series
DF itself
Aurora once the turns start to take forever to happen.
Kerbal Space Program with autojeb

So, outside these, more recommendations for it?

Distant Worlds: Universe . You can automat everything and just watch the game playing itself or you can decide to manually control everything (you choose the way you play)

Erm...
You do know that editing posts is a thing, yes?
Edit: I honestly don't really care, but it's considered polite not to double post on forums in general unless you absolutely have to.
I noticed you were new, though, so that's why I brought attention to it.
You still have a lot to learn, my young Padawan.

So I'm reading The Postman en.wikipedia.org/wiki/The_Postman

I can't but wonder if there is a good survival MMO a la Cataclysm or something like this. The only game I can remember is Salem, but I'm not sure if the game is good, I remember that tried sometime ago but I eventually dropped but I don't remember why.

This is more to spark conversation than to be a solid recommendation, but perhaps Europa Universalis/Paradox strategies in general?
They're technically realtime games (in-game day per RL-second for five centuries for example), but you can speed and slow up the flow of time, as well as pause (and set auto-pause conditions) whenever you wish. You could probably set it at low speed, set appropriate autopause conditions, and just glance at the screen every now and then to fiddle & unpause as required
Wartime playing tends to require a bit more hands-on approach, but you might be able to just speed through those. Someone who's played the latest EU/CK/Victoria could probably comment on that.

Alternatively play a heavily modded total war game, the AI turn times should allow you to finish a few chapters :P

GalCiv2 might do for you. It's pretty good as 4Xes go, not terribly complex (the ship designer is fairly deep but combat is a rock-paper-scissors affair that you can set to auto-resolve), and after the early stages it tends to come down to you pushing through turns as things slowly build and your influence expands.

Aurora on small monitors:
1. Game Parameters -> Reduced Height Windows.
2. Lock taskbar to the right side of your desktop.
3. Run Resize Enable

Sounds like most city builder games.  SimCity, Tropico, those old Impressions Games like Caesar.  Also there's SimEarth and SimAnt.
