You can't take his soul. You can destroy it if you fight it post-possession, but it tends to be even stronger then the mind.
Upon destruction of the soul the body grows immune to healing magic (and harming holy magic.) It also gives you a substantial boost to your evil bar.
Nomming souls isn't for much, much later.

+1. I'm fairly certain that our poison ability can only debuff him, so I think we should get somewhere that a vapor could actually be useful.
