Yeah we got past the gore mark, hacking limbs off people in games are fun, but i found it more fun to hack limbs off, and have the thing survive!
I mean in The Torture Game 2, i always peeled off most of the torso and head, making it completely skeletal, and yet the man was alive!
limbs are fun, but organs, its fun too. I would love a game where i messed with anatomy, and i had a chance to keep the decapicitated victims alive.
Dwarf fortress does this to some degree, but i cant control it enough, say, i cant open up the chest of my companion and carefully remove that arrow, or that failing organ.
Imagine a multiplayer game where you could do this kind of !!SCIENCE!! on other players, and NPC's of course, basically Anatomical Greifing: The game.
Who dosent want to crazy experiments on virtual people?

IVAN had some neat stuff that could happen, although randomly and mostly to you. Having lost a limb or two, your prayers could result in getting a replacement limb from some god. Although the material of this arm could be anything from adamantium to banana flesh, based on how much they liked you, I think.

EDIT: And how could I forget Slaves to Armok I, where you could teleport individual bodyparts out of someone's body. They didn't react accordingly (well, they did die accordingly, but I mean behaviourally), but it was still funny to teleport someone's heart in front of them.

In Rune you could hack people arms and legs off and they would survive, though it was very very rare. In multiplayer it's kinda funny since when you get a limb hacked off, drinking some mead or eating some meat will regenerate the limb, and if it's your arm you lost, you'll pick the food up with your ghost limb =o

Oh, you can beat people to death (very slowly) with severed limbs and heads, and even throw them at enemies.

Other than that though, you can't do any cool stuff like you mentioned. It is an action game after all.

Toribash is a fighting game, but instead of pressing a button to do am move, you have various joints that you can manipulate to do moves. In most matches, the game isn't over until a body part except the hands or feet touches the floor, so you can do lots of cool stuff.  One guy's signature move was backflipping so hard he launched his lower body at people.  It has been described as a cross between QWOP and Mortal Kombat.

Its a turn based fighting game where you can punch a dude in half and still lose because he threw your decapitated head to the ground and you got disqualified for touching the ground.

Toribash is cool, but i suck at it, i have never managed to decapicitate a person without a sword, not counting that one time where i did that two fist smacking on a dude's head, causing it to fall off..
