Yeah, seriously. Guitars in particular are just far easier to record than fiddle with samples to get any reasonably similar sound, unless we're talking about a very New-Wavey staccato, a'la Devo.

Keys can be sampled well, though acoustic piano is a bitch and a half to synthesize and AFAIK nobody bothers, so it's just samples, and drums can be indistinguishable from samples because in some cases, the producers actually cover up the live recorded drums with samples. And since production in the more mainstream/popular genres has been steadily moving towards 'what's dynamic range?' you don't even have to bother to see how the instruments would sound played harder or softer.
