There's some differences, actually. I.e carving knife has 150 size, 800 contact area and 600 penetration for its slashing - boning knife has 50 size, 500 contact area and 300 penetration for slashing.
They're all under item_tool.txt in the raw folder.

Does sheathing/unsheathing arms and shields require time? (or is it made in an instant?)
Same question for dropping/picking up items :) (not throwing)

Temporarily retire your current adventurer, go to Legends Mode to figure out where your old adventurer is, then reclaim your current adventurer and head towards your older adventurer

If you don't take a place in a fort or a village (as a militia-man or a performer) your old adventurer will be culled and will not appear until you unretire him.

Is there any way to get more specific directions to a cave in adventure mode?

I have a quest and the villager told me the region the cave is in and the region is highlighted on my fast travel map, but I've spent three days searching said region for a cave with no luck

Is there anyway to get more specific directions?

In adventurer mode, If I have my own site and some hearthpeople under my command, can I still become someone else's hearthperson, or does this remove my title?

In the top left corner of the screen, a box will have place symbols and the direction they're in. Once you get near the region of the cave, its symbol and direction relative to you should appear there.

is it possible to write secrets down. my character knows a screct and has 4 blank scrolls is it possible for me to write down the secret

Start a fresh adventure game in the same world. If you have one or more living adventurers in that world, you should see a "Play as specific person" option at character creation. Select that option, and you can choose from a list of your adventurers.

If you have DFHack running, save the following code as "fixneeds.rb" in (DF Install Folder)/hack/scripts, then on the DFHack window type "fixneeds". The code is made for Fortress Mode, but works in Adventurer Mode too. It might make everyone on the area loaded have their needs met, though I'm not sure if this side effect does in fact happen.

It is, I do it on accident all the time when trying to thaw my waterskin. Hit |I| (that's capital i, or shift-i) and it should open an advanced interaction screen, where you can select an item. Select your weapon and then you'll have the choice of naming it.

I'm not sure if it stops the weapon from breaking, though.
