So I have been watching Gilmore Girls with my sister (Well not anymore because she can't take observations)
And I've experienced three things I haven't really experienced before in any sort of show with continuity and here they are
A Waterwheel Plot
Gilmore Girls the ENTIRE thing is basically a giant waterwheel. Sure plot still advances but a lot of it is just reset back to the start. It gives the entire show a very circular feeling as characters and events will advance, only for them to sort of move backwards, then move forwards, then backwards again, then MAYBE advance forward.
Think of it like "Status Quo is God" except the status quo is changed, but then reverted down the line.
But WAIT it also has another flavor. Sometimes Gilmore Girls will start a plot but chicken out (The guy with the trench coat will turn out not to secretly have a gun hidden in there) but then later down the line do the exact same plot... but do it for real.
A Stall Plot
Ok so two characters are really close but they don't want to advance their relationship anymore because it would end the show too quickly AND they don't want to eliminate the possibility that they will get together.
Well they will often just add another character, usually out of the blue, to snatch one of the characters so to "stall" the earlier relationship. With the intent being to eventually go back.

I have never experienced a show like this...
I am not sure if I could recommend the show or not because watching it the show can be quite good at times... but the above makes it hard to find the show fulfilling.
By the way Gilmore Girl's catch phrase?: "I don't want to talk about it"
So expect a lot of episodes that could be solved in 2 minutes be solved over 2 episodes because the characters constantly walk away from conversations.
Basically if what I described doesn't phase you... Watch it... but the show IS a soap opera in pretty much everyway but name.
