Well it depends on what you're looking for.

There's CKII+. It's one of the oldest mods and had some of the most attention. It focuses primary on balancing to the point where it removes some features. I used to use it and it was okay, didn't like some of the changes to the holding system. Not sure what state it is now.

There's the Prince and the Thane. It's primary a "flavour" mod that adds a whole bunch of new flavour events and the like. I tried that out and enjoyed it although I got confused since they decided to go with more historical names. Stuff like the Byzantium Empire being something in Greek that I can't remember.

There's Project Balance. This is my personal favourite. It tries to stay as close to vanillia as possible while improving gameplay and removing some of the insanity of some dynasties. The fate of Hispania and Byzantium will take a long time to determine and blobbing in general is much slower (although very much possible with skill). Crown laws have also been changed so you can determine if you want your vassals to focus on levies, taxes or a balanced combination.

There's also a whole range of other minimods that you can look into if you just want to spice up your game. "Pagans!" and "Nerf Fatamids" are decent little "plugin" mods for the base game.

I still have yet to find anything that makes the end game more interesting, however that's more of a flaw of the game itself and should really be addressed by Paradox ... somehow.

Aye thanks.  Number three does sound best, I am weary of anything that aspires to replace game components.  I favor difficulty over ease and realism over balance, so I'll have to look into these carefully.

I have sadly never gotten The Prince and The Thane to work. Even after doing the .exe editing it would always crash at the loading screen.

I could get the mod to start up although about 50 years into the game it would always CTD. It seems rather unstable.

So I've heard. It probably has just too much stuff that the game can't handle it properly.

My favorite mod is Broken Kingdoms. I like being able to start anywhere as if the whole world was Ireland. You also end up with a completely different worldmap after about a hundred years. An amusing note is that it seems to work with other mods that add new provinces and kingdoms too.

How do I defeat the mega-blob Fatimid? It's eating the rest of the Islamic world.

It's only a matter of time before the ax falls on my Kingdom of Abyssinia. The reason I survived is because of rebellions that pops up and when the Crusade hits. When they win the crusade, their vassal loyalties increase and their hold strengthens.

Short answer is you don't. They're one of the most stable dynasties in the game and they have the mega-expansion benefits of being a Muslim.

The long answer is that the best way to try and survive as Abyssinia is to either get a dynasty member on the throne of Byzantium or become their vassal. Even then you might be in trouble since Byzantium often gets both Shia and Sunni Jihads declared against it and often loses a lot of territory to either the Seljuks or Fatimids.
Ethiopians do get a rather decent offensive bonus for their light infantry with their cultural building. A few Ethiopian training grounds and a whole bunch of cities should net you a large base of "swarm" units to throw against the Muslim hordes. Cities should help you generate taxes to spend on mercs (that's if Ethiopians have mercs without mods, I can't remember).

In real life however the Fatimids would never holy war the Ethiopian states and it's something that should be addressed.

Byzantine is almost gone but they seem to be bouncing back. I can't get mercs. I've been trying to attack some one province count in North Africa but they keep getting 6k armies from defenders of faith.

Good news, my capital of Gondor has tech parity with the rest of Europe. One of my dynasty member is heir to the Kingdom of Aragon. With feudal and city levies set to max, I have a total army of 10k.

It's absurdly overpowered.  Basically you end up using Imperial Reconquest (strip all titles off enemy) to push West until you've blobbed up against the HRE.  Then it's just a matter of waiting for the right opportunities (civil wars) to ninja grab counties off HRE.

Byzantine Empire is going strong expanding upwards. They'll probably go upwards and end up side by side with the Holy Roman Empire and have the ultimate battle of ultimate destiny.

In awesome news, my genius king has 2 genius sons and 1 grandson.

So, it's approximately 1200 and starting as munster I've managed to acquire the ever-awkward triple crown of Ireland/Scotland/Wales, England was somehow inherited by Norway shortly after being william the conquerer-ed, and only got independence after I destoyed Norway's armies in the austerlitz-of-its-time battle for the duchy of Kent. Now, after much assassinating of daughters, killing of uncles, and landing of needy children named after my online friends I've somehow managed to get some weird peace in the Kingdom of Irwascoland (Ireland/Wales/Scotland) Obviously, I'll try to go for Emperor of brittania, but I feel like I should be doing something crazy. Anything to do as a weird, brittanic faction other than conquer England?

Invade Jerusalem (in a crusade) -> lose Jerusalem to Fatimid blob, while leaving heir and his heir to have (their only) titles there -> wait for Fatimids to covert those nasty Christians in their land -> die -> INVADE ALL THE THINGS and also have everyone in your court killed due to having max decadence (at least initially). This does assume you have SoI.
