Soil layers are for the industry and military barracks (best place to dump all the stone ;D)
First stone layer houses the food and dining rooms
Second stone layer houses commoner housing
Third stone layer houses richer housing
And so-forth until you reach the sixth layer, which is for nobility and the start of the grand Arena (top level viewing for nobility)
Seventh stone layer is the common tombs (second level viewing for the middle classes)
Eighth stone layer is the noble tombs (third level viewing for commoners and the marksmen wings)
Ninth stone layer is for the champion housing and the end of the Arena (aka. the battle floor)
Tenth stone layer and below are for the dungeons, torture chambers etc etc and heavy-duty mining

Since the new version I've taken to making 10-dwarf burrows for each production tree, or a few houses built in the underground cavern for the hermits/watchdwarfs.

So far I've been putting the bedrooms in the same place: below dining rooms which are below the workshops which are below the entrance.  Only differences are that I just go a few floors down instead of to the bottom and that they look odd since they are made around the 'fun' areas (since the second I see it I wall it off.  A few forgotten folks showed up but had no way to say hi to my dwarves.

Now that I've gotten used to burrows though, and once dwarf therapist is updated, I'll probably be more organized and just lock up the 'main workers' in their own burrow with a bedroom, dining room, and workshop then just make dorms for the rest until they prove themselves worthy for something useful. 

As for my current group, I need a new idea for my bedrooms since a Dwarfy accident managed to send half a lake into the bottom of my fort, flooding the lowest area (no one was down there, but that's where the latest batch of bedrooms were going).  I'm currently tempted to turn the floor above it into a dorm, Channel enough of the flooded rooms to get the water level down to 4 then make that the new barracks (the 'accident' was based on me trying to make a swimming pool-styled barracks above ground anyway :P).


Now what REALLY changed was my metalwork.  It's now a good 50+ floors down (with a single mine shaft winding around caverns) and running on magma.  Now if I can just find some iron, or bronze, or SOMETHING to make weapons and armor from I'll be all set.

I dig down into the caverns, looking for a nice pillar to set up my fortress.
Then I relocate all my Industry into said pillar, trying to squeeze in as much as possible.

Pretty much a total overhaul, since I used to build symmetric and clearly structered fortresses.

You're lucky (or unlucky, as you may see it).  I've got a 20-z-level vertical staircase straight down in the earth with multiple exploratory tunnels running out of it and I haven't found a single underground feature yet  ???.

I actually dug up into a mountain for my housing, figured there wouldn't be anything to get in the way there.
On average in my experience the first underground features start about 40 z-levels under.

They occur in a specific layer. I find them roughly at the halfway or 1/3rd mark when it comes to total layers in the region, but this depends on your world gen settings.
