Porrim's introduction and some of the dialogue from her and Kanaya in the flashes seems to suggest that it's not so much becoming undead, as a natural defense mechanism in jadebloods to essentially be able to survive a high painful or traumatic incident that would kill other trolls. Since they have one of the most important jobs in their entire species, and it sounds as if they're rather rare, I imagine that genetically jadebloods would be given every advantage they could in survival, to continue caring for their Grubs.
