I now want to build all of the endgame gear and fill my inventory with supplies and invade/conquer The End.

Personally, my new favorite feature is the potion system. I got to demo it in one of the early 1.9 prereleases. If there really are thousands of potions, me and my friend will discover all of the best combinations.

If you're referring to the cauldrons then they have been replaced with brewing stands. There are now a much more limited variety of potions to make.
