How do you pick a dwarf to be a priest? There's no easy way to see who's a follower of which faith.

Never mind this; I was looking to fill an entertainer role in the temple.

You can't fill an actual priest role until the temple hits 2000 dorfbucks of bling value. Once it does, the game only shows you a short list of candidates. Neat.

The "short" list is because the priest has to be one of the followers of the religion you built the temple for.

Does guild have positions like cult having priest?

No, as far as I know there's no new or special positions attached to the guild halls, sadly.

My original miner Urvad became the Sacred Dye. He does "conduct meeting" in the temple for The Coal of Crystal, but I never see any dwarf "attend meeting".

A reasonable question, although I'd expect the guild/temple facilities should function as an office. However, the reason for the lack of "attend meeting" events is probably because you don't have that many miners (only ones that would go to the miners' guild), in addition to miners not typically the most stressed group in the fortress (rarely going out into the rain, probably don't haul corpses, being occupied with work, etc.).

He's the priest of the cult for The Coal of Crystal, there's no miner's guild in my fort yet.

I think the dwarf with the "attend meeting" job is the one to initiate the pair of "attend meeting"/"conduct meeting" tasks( so the lack of "attend meeting" job is strange), but I'll try to make an office for the priest anyway.

I made an office for him and Urvad "felt empathy while being cried on by an unhappy worshipper", but I didn't see if he used the office or not.

Urvad has gone berserk. Now all of the starting seven have gone.

I suspect that some dwarfs get the "unable to pray to their god" thought because they have so many gods that they can't pray to each one in time.
