Land:Locked in a perpetual night it is a treacherous journey to enter it it being surrounded on all sides by mountains and actually is not near the borders of any other country the land outside it being basically a desert while the inside is rocky with jagged cliffs and deep caves with mineral resources it's full of dangerous rivers predators and poisons and as such little people live on ground level  those that do are bandits and nomads.

Castle:A pitch gleaming white white door is lodged deep in the cliffside.A singular staircase leading upwards crumbled in ruins barely passable.The door leads into the entire real country proper.The castle is designed by a complete madman upside down stairs spikes and human skulls make up most of the walls and interior.But despite this joyous music flits through out it leading to the throne room massive and...built upside down you will fall into it on your face if you enter it without knowing that.The castle contains the farms the living corridors for all it's citizens and anything else a country needs the castle is their city it is their country and it is arranged by generations of lunatics who will defend it to their last breath.

Culture:kind and warm murderers who kill their enemies and wild animals for furniture.They are known to be very accepting of death praying to the god of insanity and death Abstract Von Lordenstein their original founder.They see him as their Savior who will plunge the world into chaos insanity and complete happiness for all eternity.They are known to be extremely polite and curdius to guests treating them like angels and beloved friends.

Bit of a weird positioning how the underlining came out in this sheet.  Anyway, that aside, there are a few things off with this sheet.  Primary of which is the apparent insistence that this is for a country.  You are merely lords.  Highly powerful lords, but still just lords beholden to the Crown.  Besides this, you've made something that would not be found within a low fantasy setting.  With the Founder, a Great House cannot have themselves as holding that position, as they would have around for many generations, being a kingdom that pledged loyalty and supported the rise or being families descended from highly notable individuals.  What is with the Perpetual Night?  Besides such an event making it literally impossible to grow food with the technology of the time, why does such an event even exist within a world where magic may or may not exist?  The dangers of the rivers and poisons of the area would drive people away from even attempting to settle further than the complete inability to grow food due to the apparent massive desert that is a hazardous trek to get across.  Besides this, the area you have made is effectively toxic to there being any more lords than yourself within the zone, which is contrary to the reason I made this game (ie. Power Struggles between Houses and with vassals).  Then there's the castle.  What you have detailed is completely impractical.  While I can see that that was the apparent point you had made it, but considering I wanted the basis to be close to the Crusades, a castle of that style doesn't really make sense.  And with the culture, even if they are the nicest individuals on the planet, why would anyone of a Crusades era culture let a culture who worships a god of Death and Insanity live?

Still accepting app's or would I have to be a minor house or waitlist??

Currently the initial group of Major Houses are filled, but that does not mean you would be unable to affect things as a Minor House, though.  Mainly just means you don't have large scale armies and a smaller starting treasury.

Don't wait on me though, if it's possible to join mid-game.

Going to have NPC Minor Houses for the purpose of allowing people to join later on and to act as filler.

Land: Two small fishing villages located near the base of the mountain region near the outskirts of  Tyrollineidia's lands. A river runs through and long the center of the mountain providing a bit of fishing. There is a half constructed castle built near the edge of the river. The beginning of a small, under manned quarry is nearby.
Castle: The castle looks like it should be of a standard design for it's time though at this moment it's mostly unfinished. The keep has been constructed but the barracks, the outer walls, granary and armory haven't been built yet. About a fifth of the outer wall and a single tower has been completed.
Culture: The culture at the base of mountain is loosely based in myths. The local god of the river 'Xardalas' receives monthly sacrifices and small festivals in his honor for keeping the river full of plentiful fish. The majority of the villagers within the lands are either fishermen or hunters. As such, most of the populace has a passing familiarity with a fishing spear or bow. The monthly festival is held on a full moon and a small fire is lit by the river. Dancing, singing and much drinking is held.
House Age: Freshly made. The House Oniislyvia hasn't even been around for two decades. They are still new to heralding the lands. Aside from their sworn allegiance to House  Tyrollineidia they have had nearly no other contact with the other noble houses. Brought into existence after great acts of valor were performed by Xilionii on the field of battle.

Considering the amount of complains I have, building up from scratch would probably be easier.  Looking at the base idea, it seems you are wanting to run a culture with basis in a desert and mountainous climate with a fairly devout populace.  With something like that, I would recommend looking at the Iberian Peninsula climate and using Spanish or Moorish culture as inspiration for how you build it, like how Ghazkull used Nordic culture for his basis and Playergamer used Holy Roman Empire/Prussian culture as a basis for theirs.  While the peninsula isn't really desert, it is one of the most arid portions of Europe.

Alternatively, you could have your basis being upon a long, relatively narrow strip of fertile land that is flanked on one side by mountains, past which are a desert that you claim as your territory despite few living there, and the other by water, akin to western North Africa.  Maybe with this you could have something akin to Carthage and have large amounts of trade, with military force being formed of mercenaries.

Is this acceptable?

The 'more to come' bit and the apparently cut-off sentence at the time of writing are having me hold off judgement for now.  Two minor things that do stick out are the lack of an appearance description for the heir and no listed ages for any of the family members, though.

As stated in the OP, I'm going with the setting have the 'Maybe Magic, Maybe Mundane' vibe to it.  For example, say smiths in an area are able to produce swords that have an apparent higher quality than those produced elsewhere that cannot be a result of skill.  Is this due to their traditions causing the blades to become enchanted, is the quality of the ore they are using the cause, or does the process they traditionally do coincidentally result in forging the metal in a way that makes it stronger?   Alchemists are able to produce a substance akin to Greek Fire.  Is this due to a chemical process or are they imbuing the substance with magic as a result of the rituals to their gods they perform during the process?  In both cases, it is unclear to the understanding they have.

Spouse: Dike Pheranike is 39 and of Southern origin. Not much is known of her except that she is Lachlan's spouse. It is rumored that she is infertile.
Designated Heir: Lu Bu, 24, Male, a renowned general from a far Eastern land. After proving himself in several battles and saving Lachlan's life on fourteen separate occasions he was adopted into the family as the heir.

   - Lu Bu has a spouse, Diao Chan, 22.

Demographics
Founder: Zachary Day, Male, Deceased. The founder of the family, arrived as the leader of the famed '500 Foreigners' who settled on the lands.
FealtyColor: Red
Land: There are a number of large and small islands off the West of the mainland, which have been owned by this family for generations. The islands provide a constant source of food with the fishing and farming, with food being exported to the mainland. The mainland itself has a number of rivers coming from far-distant mountains. These rivers are used for irrigation.
Castle: The capital and main bastion of the house is located at Reweston, a coastal city on the mainland. The castle has thick and tall stone walls, easily defendable with any ranged unit. Reweston itself is sectioned into two parts, the bastion, located atop a sheer cliff before the land tens of meters below flattens and runs to the sea, and the second part is the city proper. Such a geography makes local farming an unstable business so the majority of its food is imported from the islands.
Culture: The Day Dynasty has always accepted foreigners joining the city, as a result the city has a mix of religions, military structures, and cultures. The Day family has always had a focus on the ocean, with a significant part of the military budget

Land: it is a treacherous journey to enter it without being adequately prepared it being surrounded on all sides by mountains and actually is not touching the borders of any other major house but with 4 days it can be reached the land outside it being basically a desert but intersparced with rivers and grassy plains that are quite fertilemany small towns and the majority of the populace live here while nobles the miltary and others of notable reputation staying in the deepest parts of the country that is surronded by mouantains.while the inside is rocky with jagged cliffs and deep caves with mineral resources it's full of calm and fresh rivers predators and great herds of bountifully prey to eat and poisonous plants that without carefull treatment will be ill for consumption and make you ill and as such little people live here besides the castle and training grounds those that do are commonly bandits mercenaries and nomads.

Castle:Built in a mountain it is made mostly of marble and hardened and smoothed obsidian 3 spiraling towers rising through the rocks these towers are where the nobilty commonly sleep and the central largest one is where the king and his wife and heir live the rest of the children live in the surrounding towers the stuff inside the tower is massive and it's corridors are tight and claustrophobic it's easy to get lost among them all.

I think I've made them a lot more sane....and more survivable.

Family:House Caulder
Head of House:John Caulder: A man of strong Convictions and Honor. Is a veteran of the war with the desert people to the east, distinguesed himself in battle like many Caulder's before him. 
Spouse:Victoria Caulder=Spymaster for her husband
Designated Heir:Aaron Caulder= The oldest Son, he is being educated in the arts of war and is a officer in the Cavalry. He is an honorable man like his father, but is not afraid to do unsavory things if necessary a trait he learned from his mother.
Other Children:Susan Caulder, Justin Caulder(Twins), James Caulder(Twins), Annalise Caulder, and two adoptive children who are brother and sister:Arash and Laleh Caulder.

Demographics
Founder:Arthur Caulder(Deceased)

Fealty:The King and His family only. 

Land:Is the forest and plains area around one of the smaller roads that leads to the capital from the north. The areas is rich in game and timber, as well there is a river and many small streams that come through with lots of clay and fish in them. There are a couple small villages one being around the keeps walls.   

Castle: Though the keep itself is small, there is large walled in part of it that many troops can train in and lots of horses can be kept comfortably if necessary. They are usually out in the pastures near the keep however. The road that runs to the castle heads to the north, and brings a little trade. The Village or town around the keep is basic, but provides all necessary services. 

Culture:In times past the this road was a major point of strategic interest before the Jarl in the north swear fealty to the king. Before then this was one of the major checkpoints toward the Kingdom's capital, at the time they were at war with the North. And in a decisive battle Arthur Caulder then a Cavalry officer, led a charge that saved the King's Life.

As Reward for his valor he was given a position as a noble and given this keep and lands to watch the north. And they have ever since then, even though it is not strictly necessary nowadays with the peace with the north.

The Caulder family has the distinction of being the only minor noble family that answers directly to the king however. And their Calvary while small is some of the best in all the Kingdom, and some really good archers due to the determined game in the area. That makes hard work for the hunters.

The rest of the population is mainly farmers, a small amount are lumberjacks and clay workers who make some not bad wares that serve as decent trade. The people are proud because they consider themselves in personal service to the king, and they worship the sun-god Solaire.

Slightly rotund, with black, short cropped hair and a neatly trimmed beard. He is relatively unknown, but has earned a reputation for being earnest, if somewhat uncompromising.
Spouse: Artis Barnett, age 30. A commoner, daughter of the mayor of Westray, the island's only major settlement. Kind hearted and clever, but with a sometimes distant manner.
Designated Heir: Cinead's son Malcolm, age 3. Artis will serve as regent if necessary.

Founder: Arthur Barnett, steward to an old ruler of the Day family given lands in recognition of his long and exceptional service.
Fealty: Day Dynasty
Land: Kestrel Island, a fairly large, thickly forested maritime island. Almost all of the island's population is concentrated on its southern side due to the rocky soil and rugged terrain in the north. The economy is centered mainly around fishing and raising sheep, but a regionally respected shipbuilding tradition exists as well.
Castle: The family has its seat in Westray, the largest settlement on the island and its only port. The castle itself, just outside the town, is made of stone and fairly large, originally built by the king to serve as a base to protect against coastal raiders. The Barnetts have always lacked the funds to keep the place in good repair, however, and with the threat of raiders long past the majority of the place has become little more than a ruin.
Culture: The Kestrel Islanders are somewhat more insular and significantly more homogenous than those in the rest of the region, owing mostly to the island's fairly isolated nature, but all in all are fairly similar to the people of the rest of the region. Culturally, Kestrel Island is known mainly for its energetic whirling traditional dance, and a peculiar tart tasting sauce made from fish paste and a mixture of native herbs that they and other islanders apply with gusto to almost anything edible, but is considerably less popular on the mainland.

I'm guessing the end of the culture is supposed to have something like 'is spent upon the navy'?  Other than that, it looks good, but is a tad murky in one place.  Is the territory that belongs to them both upon the islands as well as an area upon the nearby mainland?

I think I've made them a lot more sane....and more survivable.

Sorted it out to be a bit more easily legible.  Only a couple things that need changing.  While you wrote up most of the family, you missed two of them in the 'other children' section.  And because it is unclear, I have to ask, is Sidonia Bob Von Donenstine's wife?  It's kinda unclear.  Another minor thing that is missing was the changeover of 'Fealty' to 'Color' to represent what lords you have under your control.  Need to fill that out, as well as a deed by the Founder that led to the founding of the house.

First bit in the land section is weird how it is set up, as you have the description of where the nobles are as a description for the whole land then reverse it to describe lands outside the noble area the next sentence.  Goes on good in the land section from there, but may want to change the 'bountiful herds of prey' to 'limited amounts of prey' to reason why there are less people in that region.

Culture also suffers a bit with the statement the people are kind and warm at the start, then later stating they are xenophobic and easily frightened.  Best would be to rephrase the first sentence to remove the 'kind and warm', as that is stated elsewhere, and then add 'outwardly' just before '...kind, are xenophobic...' to structure it a bit better.  Due to the reasons behind why feudalism was structured as it was (ie. Lords were given lands to govern as communication for quick response was horrible), you may want to change the nobility being in the castle of the Lord of the Great House to either them being required to come to the tower once a year/season, or have the families of the Minor Houses being within the towers, while the Lords are governing the lands given to them.

Lacking in age and gender designation in the Family section, as well as short descriptions for the Other Children section.
I'd prefer it if you replace 'only' with 'one of very few'.  Original plan called for there to be no Minor Houses within the King's land, but your's has enough possibilities that I'll allow it.  Before I let in more, I'd want more of the Minor Houses of the Great Houses filled up first.

Find one of the images in your avatar you would prefer and would make sense for a Crusades era society and put it in a spoiler.

Actually, go ahead and make one if you want to.  Avatars were mainly just a quickhand thing.
