Cargo holding vehicles have to be refitted to other cargo types. Usually they default 'passenger' or 'goods'. 'Steel' is not 'goods'. Steel is steel. You should probably use the wiki on this. https://wiki.openttd.org/Refit  Just know that you will have to attach cars to train engines to refit them. If you want a train to carry multiple cargo types that use the same car then you will have to pull them on and off the engine to refit.

I am only concerned about the transport of the steel. I have steel holding cars but as my train is traveling along the tracks, the steel in the mill is disappearing. It seems that the things produced at steel mills just up and vanishes after a while. Which is a bit annoying. Guess I will have to use 2 trains if the tracks are too long.

Most/all buildings that make something you can ship have a sort of "rot" on them. If you take too long, they take their business elsewhere sort of thing. That's just how TTD is. Passengers and mail don't suffer from this as badly as all other cargo's. Ideally, you want one train/bus/ship/plane at a station waiting on cargo. It encourages the producer to ramp up production to its limit. They will ramp down production if there is no transporter there moving good out of the station. Passengers and mail don't need this nearly as much or at all.

Interesting. So if a farm is producing 6 cows and 60 grain, if I transport all the cows but only half of the grain, will more cows be produced, eventually balancing it out?

There's a max cap on each type and the rest of your question depends entirely upon which economy grf you're using. Unless you're feeding the farm some input, they'll always max out at, say, 6 cows per month. If you don't have a train waiting in the station you might only end up with half that in the long run. The 6 is a theoretical maximum based on you having at least one train in station at all times.

So i downloaded thos game on my android phone... it's pretty much the same thing... except the game could use some downsizing or reverse/refund button because i just can't freaking place those stations accurately on a toushscreen.

it might work better with a full sized tablet tho.

It doesn't give any back in the case of roads, any kind of depots and any kind of stations.

I've seen towns with a population of 60k. I'm not sure if they have a max, but you should set an area aside for an airport as close to the middle as you can if you haven't one so already.

If I'd opinion on that, I'd say if you are spending 2 million in canals and locks alone, the location you are attempting to reach by boat is either much too hilly, or too far inland with no nearby rivers (Neither of these are necessarily valid arguments if you're a wealthy transport company adding boats for fun). You want to spend as little as possible in canals (or in channels, if you prefer terraforming) and save the money for good yet relatively fast boats instead.

Also, you want to look up the size of the hub airports if you're reserving land. Otherwise you'll have to deal with the local authority later when you need to expand the airport.

I'm pretty sure cities have no upper population limit. At least, I've personally gotten them in to the millions.

Transferring to trucks, if a short distance, is probably best. The trucks are cheap and faster than a boat.

In one of our forums past servers I did a train to port to port to train cargo runs.  It actually lost me money but the infrastructure and products produced ended up making me tons, not to mention the whole no one else in my corner of the map thing.

Build a port on the coast and build a truck cargo yard directly adjacent to the port. They'll link together as one station that can service both vehicles.

This is also useful for airports and bus stations when you have a large city.
