Amy just need to the magic infused flesh so a demon host would be enough to gain the demon's power. It also mean that as long as she eat the flesh in 30 seconds of a target that been healed, she also get the healer's power. Yes she would of got George's power as long as she eat Matt's flesh in 30 seconds of him returning.

I have no idea. Most of the characters are just possessed by beings that pretty much can't be killed in combat. It's really only Matt and Selina at risk. Nuriel will just need a new host, Demons Run is immortal, Anima is a separate entity, as is Aedan. Which should mean that Amy doesn't gain their powers since she would have only killed their host.
