It kind of makes sense in the context too. Stannis the Mannis believes he is  fighting for the survival of humanity. That means no sacrifice is too great to achieve this goal. Furthermore he keeps being hammered about how he is Azor Azhai reborn, who alñegedly killed his own wife in a similar sacrifice.
tis a pity though because I liked his papa wolf dynamic. And it decreases the odds of a decent ending for him. Then again this was pretty much foretold in Daenerys prophecy about fighting a king who casts no shadow.
plus. If it does happen in the books it means that Stannis does survive his encounter with Ramsay Snow

Screwing the murder spirit out of Barathian so it would go kill another king? Child sacrifice? Trying to hump every virile male she finds for one end or another? That's like calling the Chaos Gods of 40K "Unsympathetic but neutral."

Again, I only go on what the show has presented. I'd be willing to buy into the Red God as a force of nature if his prophet wasn't quite clearly evil and operating with her own agenda.

Melly is not the prophet of Rh'ollor, she is just a priestess.

Honestly, Rh'ollor does seem to have an agenda. Make more Rh'ollor. Ultimately however, I disagree with the 'clearly evil' part. The whole prophecy of Azhor Ahai involves the saviour of all living things having to personally kill his most beloved.

And so we have Stannis, his army freezing to death, himself the only King who actually knows and cares about the impending winter involving death itself marching on the south faced with this choice. He believes he is Azhor Ahai and nothing has shown this to not be true. He has to win here or no one else can save the entire world from Winter. If he does not do this, he dies, his armies die, his family dies, his house dies, winter comes and the armies of the dead overwhelm the wall - and then the world.
If he is to take the Iron Throne and lead the armies of the Seven Kingdoms against the White Walkers, he first needs to take Winterfell and secure the North. The only way he can do this is with a dire sacrifice. Azhor Ahai kills his beloved...
