As far as I understand it, they could pretty much nominate anyone they wanted too. much like the US speaker of the House, it can literally be a homeless dude addicted to crack. Of course, one hasn't been elected outside the council of cardinals in a long time.

They also used to pick one by shouting the name in unison, as if inspired by god.

Shocking. But considering they already have total control over the election, who are they trying to convince?
 
The other methods were adoration, which was alot like acclamation but before any official voting or vetting had taken place (showing ti was totally unanimous), and scrutinization. Unfortunately, only the last one remains legal and in use.

I always imagined Papal elections as being akin to the notable scene from Spartacus, except that the cardinals aren't all crucified afterwards.
