Honestly I have no idea what to call it.

So booze discussion aside, what else do you all think should be in this? Floodgates? magical wireless mechanisms?

We're doing cave flora right now, but what cave fauna should be included? If I add mobs, I will need models. Anyone good at making simple minecraft models?

You're just thinking in boring terms.  It only needs to be an analog, not an exact copy of the above-ground species.  Cave Pigs could be more in line with bison than anything else, tall enough that you can't look over them, with stubby legs and thick rolls of fat.  Cave Sheep wool could be mildly flammable at room temperature as a defense mechanism, so they enjoy pastures surrounded by stone fence.

For names: The Deep Caves, or just Deep Caves.

Skele - BowGoblin
Spider - Kobold
Creeper - BombGoblin

Or something like that...
You could explain the Kobold's 2x2 footprint by saying that its his Bag thats taking up the larger space...

That would take more than a texture pack, would require new models for each.

I'm not following completely, but mayby you could add evil and good biomes and have zombies skeles and creepers only spawn in them, have spiders only spawn in caves and replace the "normal" aboveground mobs with goblins and kobold scouts?
