As long as I don't customise the UI, FF keeps working. Kind of. It still takes ages to load on startup (with just firebug and noscript), and hangs every hour or so for a minute.

It's still better than IE, any version.

Are we talking on Linux or Windows?

I've had no troubles so far.  It IS slower to load due to the number of addons I have but it only screwed up when I tried to have both Firefox Sync and Xmarks synching together (Xmarks is cross-browser and has a cool auto tag bookmark feature).

The only UI customizations I've made are button/bars removals, additions or reallocations.  I haven't done that on Ubuntu 11.04 and I'm not sure if it's possible, which would suck.
