I don't even bother with a coffer in my temple. As far as I understand, usage of its contents is rare anyway, and I'm not sure it's ever used in omni temples. I've had some unfortunate experiences with dedicated temples, so I skip those.
I have a coffer which fills with instruments. But never really got around to assigning temple dancers. Do they actually work? I know most of my temples aren't quite at the optimal size for dancing.

I've certainly seen more than just "pray to <>" in temples when there's the floor space, yes, though I've never assigned performers or instruments either for that beforehand - the regular dwarves can just regularly simulate {}.

I usually build all three early on - just a basic space is enough to start out with, and once I'm properly established, improving them is easy enough. Libraries first, because I like libraries, and fancy tavern infrastructure is more complex.

Temples get outfitted with whatever religious statues the craftdwarves inspiration falls on, but I tend to just go for an interfaith prayer space, rather than individual temples unless I've a sizeable majority worshipping one particular god - no setting up individual shrines for that one god that one dwarf is kinda fond of.
Libraries are fully stocked with sufficient desks and a couple of coffers of scrolls/quires for them to scribble on. I usually set a scholar and a scribe - someone with strong scholar or writing skills but no other useful skills, maybe a medic as well if there's one looking underemployed between bouts of !!Fun!!  since that'll usually kick the writing process up a gear.

The tavern/dining room extravaganza with dance floor, mist generator and extensive statuary for that 'ate in a legendary dining room' experience takes a while to develop, but it's fun to put together. I've been tending toward two taverns - a fancy one just for citizens, and a more basic one that allows visitors (who can't hold their liquor) in order to reduce the impact of their fights on my dwarves. Anyone who wants to petition for citizenship has to serve their time listening to poetry in the Slug 'N Spoons.

I've tended to figure (on no evidence) that a fancier experience will fill up their socialising bar faster, and if I've a lot of dwarves socialising rather than working, that's fertile ground for the pressgang.

I too tend to develop a tavern/dining room combo.  Seems like a natural fit, often with kitchens next door which have pantries next door to that, and a buffet of prepared meals along one corner of the dance floor and barrels of booze stacked behind the bar.  Makes it both aesthetic and efficient for hauling purposes.  The big dining room part of it (again, fancy engraving and decorations) is because a high-value public dining hall tends to give big happy thoughts to large numbers of common dwarfs without making any (eventual) nobles jealous about presumptions since a public dining hall is only owned by the fortress itself and not an individual.  That makes it a high priority for early development for me, to get the fortress through until more comfortable accommodations can be made.

The problem with tavern+dining hall combo is that dwarf will automatically start socializing the moment their meal is finished, without asking questions like "maybe I should go pray instead?", even when the need is already red for it.

Though, for Pull Lever R or hospital the zones preventing wandering away is pretty nice.

I have all 3!Usually its not a Problem but I have this one beekeeper who worshiped in the temple 2 years and only took breaks for food and water and to sleep.
