strange mood but no workshop.

A cheese maker just got into a secretive mood. But instead of going to claim a workshop he goes to his room and is staying put...

You don't have the workshop he needs.

If cheesemaking is his only skill, then he probably wants a craftsdwarf's workshop.  Otherwise, look at his skills and see what his highest moodable skill is.

All the metalworking skills except furnace operating are moodable. Actually, pretty much all the skills that produce items with different qualities, except cooking, are moodable. You're very fortunate to have a useless cheese maker get a skill in an expensive-to-train skill like blacksmithing, too.

Oh... oh wait.... oh man...

I embarked in a deep metals embark... I only have dug 5 z levels down. Luckily I have metal bars that was traded to me. I've been saving it for a rainy day so... luck be with me!

You can get a mood for a lot of skills. Even mining, which I think is pretty much the same as the masonry mood.

Didn't one of the guys in Syrupleaf in their story arc try to feed some dwarves adamantine and it acted as a healing factor that slowly corrupted their minds?

That'd be cool. If you could elect to heal a dwarf instantly to full health but they become much more prone to tantrums.
