Wookcutters are useless to me. By the time my first migration wave arrives, I've already cut down 95% of the trees in my embark.

(Metal bolts are, of course, reserved for firing towards the actual enemy. Bone bolts are marked as dual-use, but in practice always get spent in training.)

Wait, designating bolts for combat and training actually works now?  Or do you just set separate stockpiles, with training bolts a lot closer to the archery range and metal bolts near the fortress entrance?
No, I use the military screen ammo designation, and it almost works. Trouble is that a quiver only holds 25 bolts, and they won't change ammo just because it's time to train. So you get marksdwarves with a quiver full of steel bolts listed as "Cannot follow order" in the Unit menu during training time because your Urist McIdiotCrossbowslingers can't figure out how to put the live ammo down and pick up the practice rounds. They will, however, shoot the practice ammo at the enemy if that's what they have when they're ordered to fight. Then they will go pick up a stack of combat ammo when they reload.

Also, a newly drafted Marksdwarf will immediately pick up training bolts and train with them, and won't pick up metal bolts until it's actually time to go fight. So by the time this bug has an opportunity to interfere, your Marksdwarves can shoot pretty well.

I never RPT NEVER use: Animal jobs aside from training; wax working, beekeeper and presser, mainly because I don't do beekeeping; fishing skills likewise; I don't use the HFS, so strand extractors are no good; siege operators and engineers don't help at all; glazers because I never need glazed pots, I use stoneware/glass/rock.

I infrequently use: potash makers, pump operators, wood crafters, and glass makers OR potters, depending on how my fort goes. Exceptions are made for mandates and similar; this is the only time I use trappers and siege engineers.

Your running out of wood? Get 2 or more woodcutters who don't have wood hauling enabled and you'll get plenty. (heavily forested area at least).

Masterwork wood bolts are apparently as good as regular iron ones, and since about 1% of the maps have iron...

I always have a legendary carpenter by my 3rd year now.

Fishing is just as good as farming if you have a river. One of my fortresses my food stockpiles where either plump helmets or mussels.

I think a lot of these posts generally boil down to either "This skill is broken, and therefore literally useless" (animal caretaker), which is kind of redundant, "I don't use this job because there are better substitutes" (bees and potash and wax, oh my!), which is fair, and "I don't use this job because I import its products." That's... kind of the opposite of useless, don't you think?

Uh, no. Actually, I think it's just a variation of another category you posted:

For example, my current game which is very metal-scarce: instead of mining, smelting and smithing I grow pig tails, make robes and buy all the metal stuff I need. I could as well be growing the metal.

And yes, I have to admit that I find it most annoying that each immigrant wave brings me two or more metal experts. I use very little metal ATM - a single good worker would be much better than this horde of mass-producers.

Let me give you a personal example. I don't touch the cloth-making industry, because between the humans and the elves, I get far more than I'll ever need.

That means that someone, somewhere, is making my cloth for me. I still need its products, I'm just not making one of my dwarves use the labor.
