How to create Custom Professions in Dwarf Therapist in a practical way?

The labors are all in alphabetical order and it is difficult to find them.

Well, you could use a dwarf as a template (with skills easily found by category) and use "new custom profession from this dwarf" from the right click menu. The new profession will have all the skills you selected for that dwarf checked.
