To my knowledge the immune to mind altering effects is a consequence of them being mindless. They tend to lose that when they become an intelligent undead.

Liches get so many immunities because they were designed as a "boss" monster so to speak... and like Dragons, for example, they had their CR number lowered so they are stronger then the game tells you (something I HATE).
