I'm pretty sure the joke is actually that it isn't a joke at all. It's non-humor. No one finds it funny because people don't understand humor and introduce their kids to it as their first "joke".

Just to note: That joke first showed up in 1856 or so, before auto fatalities were really a thing. It's still pretty crazy that people rarely look at it from a modern angle like that, though.

I don't think it really means that at all.
One of the pillars of comedy is to build expectation, then totally break it. Have something totally out of line happen as to what you were expecting. This is an early example of that, in that you expect a punchline involving some witty pun, but instead get the blatant, obvious truth. It just happens to have a nifty double meaning in this case.

Trust me, it is funnier if you haven't heard it a bajillion times in the past.

Which everyone has, for some damn reason. That joke makes me mad because it's often one of the first jokes people hear, even though the entire point is to subvert expectations; you're expecting a joke, you get an answer. Somehow, it's still told, but only as a parody, which it wasn't.

Well based on the fact that it is so self defeating in the fact that everybody constantly still tells it like it is hot shit, you could say it has become a very effective parody of itself. The joke that was meant to subvert expectation now conforms to total expectation.
Suddenly it is humours, not for the punchline, but for the irony of itself. A joke reborn with entirely new depth and social commentary!

Anti-humor can be funnier then humor-humor.

'Latvian' jokes, for example.

For example, three man of differing cultural backgrounds walk into a bar. The first two say something topical and wise, and the third then says something some what stupid that singles out his cultural background as being inferior.

Two modern artists walk into a bar.

The bartender turns into duck.

That would be an example of the first one, breaking expectations. See, it works well doesn't it!

Actually if you had an open enough mind the joke wouldn't break any expectations  :P

A surrealist walks into a bar and asks, with a thick accent, "What is time?"
The bartender starts a lengthy diatribe about the nature of the universe when he is cut off by the surrealist.
The surrealist clarifies, "What is time of day? Clock has melted."
