I like to build fort entrances out of Kaolinite/Bauxite.  Great for hiding blood!

I once had a particularly olivine-rich fort, I had so much of it I decided to build a rough paved road across the map just to get rid of it. I later realized that it used the exact same tile and colour as dwarven vomit

I used to love building out of green glass, because with a magma-glassfurnace, it was literally infinite.  That and one of my first few moods was usually the glassmaker.  A few legendary glassmakers can output hundreds of glass blocks in next to no time AND can consistently produce masterwork furniture.

Baring access to magma or in the new version, I don't feel like digging far enough to get to it, I go for the colored stone.  I think I'm the only DF player that likes microcline.  What can I say, I like blue.  Interestingly, in the real world, while microcline can come in various colors...blue is not one of them.  Toady geologically dropped the ball...in a few places, but this is the one I'm talking about now.

Metal for the win ... it shows how wealthy you are if you can make your walls from gold/platinum/steel ... (however you don't have the option in the OP)

Blocks. Metal blocks (usually steel), stone blocks (obsidian if possible, flux material if not). Clear glass blocks work too. I like it to feel like I've accomplished something when I build big.

I make my external walls and tower out of glass. Always. I just like the idea of seeing a glass fortress from a distance, sound magical.
And let's not forget that gobbo's blood doesn't stain glass walls. I just hate stained walls. And there's the extra of seeing the faces of those that falls to my traps; seeing a morning blood shower is the best thing to start a day
