Why, isn't it obvious? A super-long path which is completely forbidden to my dwarves and has magma beneath it and fire-bins in it, which closes on both ends as soon as you hit the 75% way through mark (if you last that long) and is never ever cleaned. Caravans and seiges must both go through a pit of hellish heat and molten corpses only to get trapped and killed before they even reach their destination.

Fixed. You wouldn't want to waste all this precious booze by mixing it with the blood of invaders now, would you? Much less giving them an opportunity to get a taste of one of the four dwarven wonders, right?!

Jokes aside, wells and moats of blood, vomit drowning chambers, booze fountains and mist generators, boiling oil traps, anyone?

EDIT: How could I forget filling wells with booze, too.

Set their only profession to refuse hauling.

A booze moat would be incredible. Carving a couple of giant stone faces near your entrance and linking them to a blood reservoir would be the world's greatest defensive system too.

build a giant cistern over a volcano, fill it with booze, and then have an annual dwarven rite of passage where a dwarf must deconstruct a wall near the edge and swim up the booze-stream to avoid being burned alive.

True, but at a certain velocity the resulting explosion expels invader-bits at fatal speeds. You don't want to be dropping trogdolyte-shaped shrapnel bombs into your boneworks.
Only in Dwarf Fortress...
