I get the "handling dangerous animal" when attempting to milk thing to, but the milker always does manage to milk the cow. The message seems to be unnecessary. At least, unless you're milking a dragon or something.

Hi!

Yes, I can confirm that the dangerous animal message is unnecessary and does actually not impede the job. It will still be carried out.

And it is NOT related to cages, as I have experienced it myself, and I don't keep any of my animals caged or restrained.

Cheese production works fine. Actually, you will want to do something more like
Milk
Milk
Milk
Milk
Milk
WAIT
WAIT
Make Cheese

Milking results in a bucket of milk. Given some leisure time, a dwarf fill take that bucket and fill the milk into an appropriate milk barrel (adding distinct units of milk). When you make cheese, a dwarf will fetch a milk barrel and (if I recall correctly) convert ALL the milk in the barrel into cheese.

No.

How about having a meeting zone in a burrow with no dwarves assigned to it. The animals should still hang out, but no dwarves?

Thing is you would need to designate everywhere but there as a burrow and assign all the dwarves to it.

Do all animals that can be milked produce the same amount of milk and/or have the same recharge time in between permitted milkings?

Are there any bugs with cooking milk?

Also, milk comes 100 to a barrel in my experiments, so you get shafted as far as barrels are concerned.  Taking one of every kind of meat as well solves this problem.
The milk I embarked with came 5 to a barrel, just like everything else.
