Quick question- Do falling objects (eg anvils) injure dwarfs (eg nobles) that they land on?

Sadly, no.  Falling floors will however.  Falling goblins won't hurt them from the falling, but will shortly afterward.

Any goblins that fall on your dwarf shouldn't be falling from less than 12 z-levels. If they are you're doing it wrong.

I think somewhere in the notes is that stuff chained up will choke if dropped. CAN YOU SAY HANGING PLATFORMS! :D

PUT THE GOBLIN LEADERS ON TRIAL AND HANG THEM!

That's a goal for a future version.  At the moment chains instantly disconnect if the creature attached to them falls or becomes airborne.

I don't think so. From my experience they hang on z-level below the restraint, with chain still on their necks. But it doesn't cause any damage, no choking.

As for falling objects, they don't hit creatures they fall on. Cave-in with falling floors or walls is another story of course.

This is completely in contradiction to every bit of testing I've done or seen.  Do you have a save or screenshot demonstrating this?

Maybe the chains just aren't around their necks?
I'd imagine the chain around their ankle in any case.

They are in the neck.
Build a restraint, assign a dog to it, then deconstruct the restraint, while the dog is still assigned. Now view the dog's equipment, you will see it has a chain in its neck.

Choking by hanging simply isn't implemented yet.
