I assume you're talking about spamming dodge to be essentially invincible (which you kinda have to because of the dumb unparryable attacks from heavies).  Especially spamming dodge *onto* an enemy, which stuns even most warchiefs and opens them up for a deadly flurry attack.  Even if they're immune, they don't really hurt you (just taunt and toss you).

But it doesn't bother me toooo much because you're still vulnerable to archers, and especially vulnerable to the warchief's minions while you're trying to do the flurry.  So spamming dodge gives breathing room, but they're not completely vulnerable (unless you've got them alone).  Of course, you did say 1v1 combat...  But the highest level guys are often immune to that stun.

I'm pretty sure I fought a few max-level chiefs who were immune to everything except combo "finishers", which chipped their health.  And hitting them with a normal attack got me grabbed and punished.  So I had to build up combos on their minions, then hit them with the finisher...  A few times.  Toughest situation, but actually pretty fun (:

Of course it's also hilarious to have a high-level chief who's weak against ranged attacks, haha.  BOOM HEADSHOT, ez peasy.
The ones who are weak against stealth are my favorite, because those almost feel earned.
