It's thought that a VERY small minority of bikers actually do illegal stuff. The rest just do it for the same reason other people join clubs- fun.
I was under the impression that bikers were just normal people who have a hobby of riding bikes and activities surrounding bikes (vehicle repairs/modification/maintenance and what have you). And some of them are TV chefs and all.
But apart from the being in a group who work together, which does tend to improve general tendencies towards being charitable, I didn't think bikers were any more or less helpful than your average person.

On the subject of bikers, from my experience they're similar as a group to metalheads - mostly nicer than the average population, but with a few complete assholes who are the ones that make the headlines.
