I think in the future you should be able to make Chunks into food for Dogs and for prisoners, such as goblins. What do you guys think?

Rather than having them directly force you to mine adamantine, I would suggest that they give you strange moods that require adamantine. "Dig out the adamantine or Urist here goes insane and dies" is suitably vicious.

(It occurs to me that you can probably get "Lovecraft" as the random name of your fortress. That's when you know you're screwed.)

Pretty much; mostly organs.

Some Dwarves, however, will drop chunks while being attacked by wild animals, but walk away with no lasting injuries; as such, chunks could be anything not worth eating.

The only problem is that Chunks really should take away from the meat a body will give.

Methinks it should be based say on a butchery skill those that you get from a corpse. You're dabbling guy only manages to hack away 1/4, 1/3 of the usable meat on a corpse leaving everything else as chunks, where a very skilled butcher can utilize nearly every bit of meat. But those from combat I prefer to think of as more of a thin red paste than anything else

It might be nice to have an option "cook chunks" -- pad out prepared meals with the nasty parts of a carcass, but lower the quality on items that include them.  The resulting items wouldn't sell for much, and dwarves might get mild unhappy thoughts eating them, but in a fortress facing starvation or large-scale de-kittening...

If it's mostly organs, why not an ability to sort chunks into it's components and byproducts:
-Liver
-Sausage
-Haggis
-Brains (Considered a delicacy in some countries)

We'd need infinite wildlife for that to be even worth considering

Yes, but you'll get a legendary cook out of the deal, since fell mood is the only sane mechanic to link this to.
