I'm pretty sure the game registers that as unarmed combat. Which is ridiculous.

Bloat XXX: Cabinetskill - all improvised weaponry should have their own skill. This may have interesting effects when the legendary cabinetdwarf tries to switch over to a 'real' weapon like an axe.

I think improvised weapons would probably use an "imrovisation" skill.  Of course, some items could be tagged as being similar to real weapons (broom handle - quarterstaff.  Why aren't there quarterstaves in DF?  They're awesome).
