So here's a question that I feel like I already know the answer to but would like to know just in case: can I target a spell at a face-down card, or do I have to use a non-targeted spell for that?

I'm assuming you speak of the organic targeting spell. Which begs the question, does a facedown have a known quality if you haven't seen it yet?

Also, the stargain effect shouldn't trigger in this case since even if you do reduce it to 0, it won't be destroyed until it's flipped.
