I've read on these forums that there's no point putting goblets into tavern chests, and non-bin goblet stockpiles are better. Is that also true of musical instruments?

No. Instruments are happily stored in a tavern's coffers (although there's a bug that sometimes causes instruments to be locked at "TSK", but that blocks both storage and usage. Just remember that stationary instruments have to be built (although I've yet so see one used).

Goblets stored in tavern chests are reserved for usage by tavern personnel. If the tavern is staffed, the goblets will be used, but patrons aren't allowed to use them to self serve (and I still don't know if tavern personnel take the patrons' preferences into account when stuffing booze down their throats, or whether they'll just take what happens to be nearest).
