most of my screen looks like this. why is there all this red? is there a way I can return it to the way it was?

Fallen leaves.

You can get rid of it by keeping all the trees cut down.

Also fallen fruit.  Apples, Cherries, persimmons and other red fruits.
You can make your plant gatherer dwarves go pick the fruit up off the ground and you can then use it in alcohol.

There is an easier way.

Am I right to assume that you are using DFHack? If yes there is a command that can remove* all that stuff. Just type "clean map item" (without the quotes) in the console and press "enter".

*eventualy they are going to appear again but you can just run the same command whenever they become too much for you

Or you could wait for the season to change again.

You could change your colour scheme too if it's just the actual redness of the red you don't like. There's a fair few to choose from, many easier on the eyes than vanilla.

Seems a less extreme idea than hacking out bits of the game you don't like. After all, it goes away naturally.
