When caravan arrives they first tell me what their demanded goods for the next year, and then ask me to tell them my demands, are these demands recorded anywhere? do i need to note them down irl?

I believe it's on you to remember. They aren't a big deal, and most players largely ignore it, since caravans currently act more like garbage disposals than actual traders. There is no negative effect for not making whatever they want.

well that sucks, i was hoping to make some easy profit plus would be a bit immersive, oh well

I note the items they want and try to make some of the ones they'll pay high prices for during the year, because of the high prices. But it usually turns out to be wishful thinking as I'm busy with everything else and don't tend to focus on it.

To clarify for those who didn't know this existed: (c)World info screen > (c) Civilizations > select the civilization in question > (tab) for agreements. The local kobold and goblin agreement pages are always entertaining.
