According to the wiki page on alcohol:

While dwarves rely on alcohol from the moment they are born, creatures of any race who are exposed to enough combat to become fully hardened ("doesn't really care about anything anymore") will also become alcoholics.

According to creature tokens:

ALCOHOL_DEPENDENT: Creature needs alcohol to get through the working day, choosing to drink booze instead of water if possible. Going sober for too long reduces speed.

Is that to say, if your adventurer species does not start out with said ALCOHOL_DEPENDENT token,
will killing enough things, gaining the 'drink alcohol' need and being sober for a long time still reduce your speed (i.e. does adventurer gain ALCOHOL_DEPENDENT token)?

Or will they be able to ignore alcohol and still move at proper speed, unlike the drink-loving dwarves?

Yes - in Dwarf Fortress, that's what it means to be an alcoholic.

It didn't immediately go away, or after retiring then waiting for a few days, but maybe it's a gradual process based on actual adventure mode ticks. I'd need to keep playing to be sure.

This was also an older save from a few versions ago, so things may have changed.

oh so it's if you Murder a bunch you get thirsty for booze,
being pacifist makes you faster up until you witness too many battles and need to drink to live.

I'm pretty sure dwarf adventurers don't get slower as they don't get enough alcohol, so it should be irrelevant whether or not other adventurers get it. I do know that the combat hardness stat of adventurers could get raised by combat, really easily actually; and the maximum combat hardness was enough to cause alcoholism.

I don't think it would cause a drink alcohol need because that's caused by the intemperance personality trait, and I think exclusively by the intemperance personality trait.
