So Nintendo has revealed the new Zelda's title and gameplay in their E3 Treehouse stream today, and it looks utterly fantastic. Not only is it full open world, but it looks like the gameplay is taking some inspiration from Souls and Skyrim and other such RPGs.
The plot that's been revealed so far is that the game starts with Link waking up from a 100 year long slumber in a ruined Hyrule that was devastated in the past by
Ganon (Now referred to simply as Calamity Ganon), who was sealed away inside Hyrule Castle. Hyrule itself has been overrun by the wilderness and is filled with ruins and scattered Shiekah magitech artifacts. Timeline hints seem to be pointing as being most likely in either the Decline Timeline due to the presence of several elements from the original Zelda games, or the Adult Timeline due to the presence of Koroks and the similar appearances shared by a couple characters along with Hyrule's sparse state.

-Full Open World
-Freaking huge hyrule with a map some have theorized is made from stitching together all the hyrule maps from throughout the series. (East coast made from the early Zelda maps, while the modern Hyrule from OOT and TP makes up the west.) The total map is said to be 12 times the size of Twilight Princess's
-Stealth mechanics
-More complex fighting with parrying and dodges and stuff
-You can steal enemy's weapons. This is extra important because weapon durability is a thing
-Several types of weapons including spears, axes, hammers, and clubs
-There's hunting and gathering and an extensive cooking/potion making system (Can cook a meal/potion with up to five ingredients tossed into a cooking pot thing, so for example spicy food that gives temporary cold resistance can be cooked using peppers, and a potion called a spicy elixer was made at one point in the stream using various mushrooms, bokoblin horns, and a butterfly). Also yes, cooking failed dishes is a thing. It is apparently so disgusting that the icon for it is mosaic censored
-You can set grass on fire
-There's swappable clothing and armor. Link's been shown in the trailer wearing a full set of armor (well sans helmet anyways) Looks to be made up of just pants and shirts so far
-Climbing anything that could conceivably have handholds and swimming.
-You can run around in your underwear if you want
-Physics mechanics
-You can throw your weapons
-There's a magnet item that can be used to pick up objects
-So if you want you can throw a weapon, pick it up with the magnet, and then swing it around in midair to hit far away enemies
-There's a timestop spell that can as an example freeze a giant boulder and then you can hit the boulder several times and all the force will be preserved when its unfrozen and so the boulder will be sent flying into the air
-Enemies drop bodyparts and other loot. YOU CAN KNOCK OFF A STALFOS ARM AND BEAT THEM WITH IT
-You can knock over someone and steal their weapon while they're down and then make a run for it.
-You can use axe's to chop down trees to make makeshift bridges
-Link can jump
-There are scattered field bosses.
-You can use the Wolf Link Amiibo to summon Wolf Link as a helper once a day and they will have either three hearts, or as many hearts as link has in your Twilight Princess HD savefile
-There are Koroks
-You can use your shield to surf on the snow and land at the cost of wearing down your shield's durability
-YOU CAN SHOOT FIRE ARROWS AT THE GROUND TO LIGHT IT ON FIRE, DO A RUNNING LEAP AND OPEN YOUR PARACHUTE SO THE FIRE'S THERMAL UPDRAFT CARRIES YOU INTO THE AIR, AND THEN WHILE YOU'RE UP THERE BOMBARD THE ENEMY WITH ARROWS
-Cutting tall grass will not drop things, instead you can regain health by eating food.
-There is no overly helpful companion following Link around.
-An item called the Shiekah Slate based off the WiiU gamepad that is used for various spells via collectable "Runes" along with map marking, observing enemies, and unlocking the Shiekah Shrines
-Pulling out your bow in midair will cause time to slow down for careful and awesome aiming of shots
-You can build bonfires by dropping firewood (gained from cutting down trees presumeably) and a pile of flint, and then hitting them with your sword.
-Areas of various climates exist. Link will shiver and lose health in cold climates unless he consumes something that raises his body temperature or wears warm clothing.
-At one point Link dodged an attack via backflip which caused time to slow down and chain into a reaction command where he dashed forward and countered with a flurry of blows against the enemy.
-Only 2% of the overworld map was shown in the E3 footage so far.
-The Temple of Time is in the game. It's in utter ruin (as in there are walls and several chunks missing from it.) and there's a statue of Hylia inside.
-Helpful Koroks are hidden throughout the world.
-You can manually set your arrows on fire by holding them over something that's burning after drawing your bow.
-If you feel like doing so it's possible to speedrun the game by skipping most of the story. You can go challenge the final boss straight from the get-go.
-Enemies will attack animals that bother them and hunt them for food on their own volition.
-There are over 100 Shiekah Shrine trials/mini dungeons
