I've had a lot of luck stressing certain Dwarves.  Specifically any visiting Poet/Bard/Scholar who is Dwarf.  I accept their residency application, and they basically hang in the tavern/library for two years.  Then I give em citizenship and they head outside to haul wood.

Cave adaptation seems to stress em up good if you give it a while and they have reasonable time on the surface.  The nausea makes em so slow that all their other needs will climb too and they generally have a horrible time.

Update.

Fikod Olonbim, Dwarven Child has slipped into depression...
Rovod Vukcasushat, Hammerdwarf has slipped into depression...

They had both 25k stress. And they mainly complained about being rained on. Other dwarves seemed OK, because their stress didn't grow like that two did.
By the way, the fort had a tavern, a temple and a library. All dwarves were in the opening.

When you say you have a temple, do you have really only 1 temple ?
Because that could be the problem, dwarves are worshipping different deities, so you need to have many temples to ensure there's no a dwarf that will be unable to worship to lower the stress level. So if those 2 needs to pray to a deity and you don't have a temple for this one, they're out of luck and will only stress more.

No need to make big structure, a simple 3x3 room with the table on the middle to make the location, by example to the bottom left of my screen here are the 12 temples that were needed in my fort for all the dwarves needs.

Yeah, I know. It was just a test to see how many of them would actually affected by stress under harsher living condition.
Because I hadn't seen any stressed dwarf since 0.42, until I let them all live in the opening.

The hammerdwarf finally snapped. He killed a blacksmith and beat up a butcher before calming down.

The hammer lord and baron finally went berserk and was killed by a hammerdwarf from his squad.
A dwarven child saw that and wanted to avenge his father but was killed by a mace lord.
