Having done so, we should probably restrain them before they get bored of being in pain and start attacking us. Pepper spray isn't much good at knocking people out.

Use cuffs, or alternatively chunks torn out of their Kevlar armor, the stuff is fibrous and tough as hell, but easy to pull apart if you can get hands-on.
