You know, now that everyone's about to enter a haunted forest built upon numerous Native American burial sites, I figure it's probably a good time to mention that one of the NPC concepts I pitched to USEC was a wendigo with an addiction to human flesh!

Same reason cats eat meat. They physically cannot eat anything else.
Ghouls, for example, only eat human flesh in most myths.
