Uhh. No, it wouldn't.

What, precisely, does a Latex Allergy syndrome involve?

Blisters, rash, runny nose, sneezing, coughing. The trick is, it would only be contracted from latex and not from entities with latex allergy.

On second thought, I don't know how to do it without boiling/melting the latex rock, which is... not ideal because I wanted to make a rubber industry going in this mod. Real bummer, but I guess you could say that it's synthetic, allergy-free latex. :P
