Um, because, usually, you don't instantly die when you lose the ability to fight?
Like, say, if you've been shot several times in the chest and are probably bleeding to death that's a good example of normal combat, but in real life you have several seconds to cough out an "I love you" before your lungs fill up with fluid or whatever.

We can't have dramatic death scenes WITH it.
Because instant kills are instant.
At least a couple turn grace period would be nice.  And, slightly more realistic assuming short turns and all.
