Crazy Theory: The dragon is force-attuned.

It passively manipulates the minds of creatures around it so that it is harder to see/detect (but not so hard to see that it can't be seen in broad daylight (by a human)). Jedi (like the PC) have the necessary mental training to resist its powers and see it clearly, even in the dark. Banthas are weak-willed animals, so they can't even see the dragon's corpse (due to the residual force-energy on the corpse). Alternatively, the dragon stunned/stupefied/calmed them with its mental/force powers. That hunter that went into the cave clutched his head because he was being mentally assaulted.

As for the banthas not being startled by the mines... They're probably used to sudden explosions, considering that they live in a warzone (between Czerka and the raiders).

According to Wookiepedia, Krayt dragons are naturally drawn to areas where the Force is strong, particularly the Dark Side - and the Star Maps are powerful Dark-aligned artifacts. This suggests a natural Force sensitivity.

In addition to being maps, one was suggested to have been responsible for the size of Kashyyyk's trees, while another is implied to be-

That the Tatooine Star Map could imbue a Krayt dragon that made the map chamber a nest(possibly drawn in by the map to serve as a guardian) with considerable Force powers might not be that impossible.
