Calculating things like a rough number of atoms is fairly easy. If the universe is finite and we know the volume and density (and element distribution), we can do it.

But since we don't even know where the ends of the universe is that's a tad difficult
We just know where the stars that are just past the edge of their light reaching us before the expansion of the univers keeps the light from reaching
