"Theoretically, judging by a couple of instances that we've seen.  You can restore the forms and minds of those afflicted.  But they must be completely lost.

If you really want to change her back, she is going to need to be attacked by another of the Vestiges, so that she loses all that remains of her sense of self.  Then, you or someone else will have to kill the Grimm that she becomes.  Afterwards, she might be able to be brought back as a human, if she doesn't die with the Grimm and if her mind is still intact."  The professor states these things coolly but her tone is not indicative of hope.
